Fits knife blades with up to a 1/8" thickness. Each edge guard has a flared opening so knife blades can be safely inserted into the guard. Always press knife into edge guard on a diagonal - never slide your knife into the guard from the end. The five bright colors make it easy to differentiate knives so you can quickly find the right knife for the task at hand. Don't like bright colors? No Problem! The edge guards also come in solid black. Brothers Scott and Mike Staib founded Ergo Chef after Sous Chef Scott was forced into early retirement due to tendonitis and carpal tunnel syndrome from the repetitive motion injuries caused by frequent knife use. The brothers put their professional skills together (Mike is an engineer) and worked closely with designers at the family’s design and machining company in New England to examine how a conventional knife fits in a chef’s hand, the movement of a chef’s wrist and hand during chopping and the angle at which a knife hits the cutting board. Together, they crafted a knife that was a true extension of a chef’s hand. After just three weeks of using the ergonomically-designed knives, Scott’s persistent tendonitis and carpal tunnel symptoms disappeared. He created 50 prototypes of the knives and sent them to professional chefs, student chefs and culinary professors across the country. The response was overwhelmingly positive, and Ergo Chef was born in 2002. The universal edge guard set by ergo chef includes 2 wide-blade and 3 narrow-blade guards to make a set of 5. The guards protect the edges of your knives - and your fingers, too! store and transport knives safely without damaging or dulling their blade edge. The bright colors help identify knives easily in a drawer or in a knife roll. The guards work on all stamped, forged, and ceramic knives. To clean, wipe with a clean, damp cloth.
